How is biltong made?
The meat is cut into wider strips, 4 mm thick, which are lightly salted and dried in a slow air flow at a lower temperature for several hours to preserve the taste of real meat. After drying, the meat remains softer and juicier than classic jerky. This process has been proven for centuries and gives biltong its unmistakable quality. Finally, the dried slices are cut by hand across the grain into smaller pieces.
