India Darjeeling Decaffeinated is a mild and light black tea with a pleasant, distinct flavour and aroma. This tea is ideal for people who are sensitive to theine (caffeine), as it has been very gently removed. What hasn't been removed, however, is the wonderful flavour of the golden brew, which contains sweet notes that you can enhance by adding a teaspoon of honey or cane sugar.

The caffeine is removed using the high-pressure extraction methour This simple process uses the properties of highly compressed carbon dioxide. The tea is placed in a very stable tank, which is then sealed tightly. A high-pressure pump then extracts the carbon dioxide. Due to the extremely high pressure, the carbon dioxide release reaction is altered so that only theine (caffeine) is extracted from the tea, leaving the tank along with the carbon dioxide stream. In a separate tank, the carbon dioxide is stripped of the theine and flows back to the pump, where it can once again bind with theine from the tea under high pressure, thus closing the circuit. This is a very gentle processing method for the tea and is perfectly environmentally friendly.
Ingredients
Indian black tea.
Preparation
Pour 250ml of hot water at approximately 100°C over 15–18g of tea. Brew for 3–5 minutes, depending on the desired strength.
Storage
Store in a dry place at a temperature up to 25°C, away from direct sunlight. Protect from frost.
