To make 250 ml of tea, you need hot water at a temperature not exceeding 85 °C. The flavour of the tea is best enhanced by pouring water at a temperature of between 75 and 85 °C over the leaves and letting it infuse for 2-4 minutes. Following a set procedure for making tea is perhaps more important than you might expect. If you leave the leaves to infuse longer, the whole infusion could become undesirably bitter, while insufficient infusion will not bring out all the flavour of the tea.
