Tanzania is located in East Africa and, in addition to the mainland, it also includes the islands of Zanzibar and Pemba in the Indian Ocean. Coffee was first cultivated here in the 16th century by the Haya tribe. Large-scale cultivation of arabica did not take off until 1898, when the Jesuit order came to the Kilimanjaro area. The processing and finishing of coffee beans is done centrally in the town of Moshi. The coffee bean trade is very important economically for the country. Up to 80% of the total production is provided by small farmers who are organised in coffee growers' cooperatives.

Freshness is an absolute priority

Coffee is definitely not the kind of thing that would sit on a shelf for weeks and months waiting for someone to finally buy it and ship it. Arabica is imported to the Czech Republic from selected destinations green and in original jute bags, because they put a real emphasis on authenticity. They roast the coffee for as short a time as possible before shipping to ensure you're drinking fresh coffee.

How do you roast Arabica?

They always try to get the most out of green arabica because they know that their customers have refined tastes and want to indulge in quality coffee. For most of the imported arabicas, we have found medium roasting to suppress the acidity characteristic of lighter roasts and, on the contrary, to bring out the typical coffee aroma with hints of nuts, chocolate or caramel. At the same time, this roasting process preserves a certain smoothness and lightness of the coffee, so don't expect any earthy and dense notes that would distract from the gourmet experience.

Preparation

For 1 cup (200 ml), use 1-2 teaspoons of ground coffee (5-7 g) and pour boiling water over it.
