India Darjeeling Decaffeinated is a mild and light black tea with a pleasant, distinct taste and aroma. This tea is perfect for people who are sensitive to theine (caffeine), as it has been removed using a very gentle process. What hasn't been removed, however, is the great flavour of the golden infusion, which conceals sweet notes that you can enhance even further by adding a teaspoon of honey or cane sugar.

The caffeine removal is done using the high-pressure extraction methour This simple process utilises the properties of highly compressed carbon dioxide. The tea is placed in a very stable tank, which is then sealed tightly. A high-pressure pump then draws out the carbon dioxide. Due to the very high pressure, the carbon dioxide release reaction changes in such a way that only theine (caffeine) is separated from the tea, leaving the tank along with the carbon dioxide stream. In another tank, the carbon dioxide is stripped of theine and flows back to the pump, ready to be combined under high pressure with more theine from the tea, thus closing the circuit. This is a very gentle process that is also perfectly environmentally friendly.
Ingredients
Indian black tea.
Preparation
Pour 250ml of hot water at approximately 100°C over 15–18g of tea. Leave to infuse for 3–5 minutes, depending on your desired strength.
Storage
Store in a dry place at temperatures up to 25°C, away from direct sunlight. Protect from frost.
