This style of roasting ends just before the second crack, when the beans are already completely unified in colour and roasted. City Roast is typically slightly darker in colour than Light Roast, but still retains some of the characteristics of a lighter roast, such as higher acidity and a milder flavour profile. Coffee roasted to City Roast grade presents a balanced combination of sweetness, acidity and full body.

If you prepare AlzaCafé Colombia coffee using other methods (V60, chemex), make sure you use the correct ratio of water to coffee (15:1) and the water temperature should be 93 °C.

The interesting thing about this particular coffee from the Medellín region is its aftertaste, which lingers in the mouth for a long time. Colombia is known for its frequent weather fluctuations, but local farmers can still boast a bountiful harvest every year. The fruit is hand-picked, so that the grains are not damaged during picking. The so-called. wet method, which means that the grains are first soaked. The correct maturity of the grains is determined by whether they remain at the bottom or on the surface. Only the mature grains linger on the bottom. The next step is to remove the skins and pulp. The final stage of drying takes place in the sun and then in special drying rooms.
